
Here's a great kid (and adult) snack using the lowly corn tortilla, a lovely bread that lasts for eons in the fridge. Forget about the flour ones; very non-authentic.
Butter a fairly hot non-stick pan. Toss two cold corn tortillas in there. Flip 'em to soften 'em. Put a bunch of cheddar cheese on one and top it with the other. Flip it like a grilled cheese until it's starting to brown. Make sure some of the cheese spills out and toasts crisp along the sides.
Cut into quarters. Serve with sour cream and, for adults, some Tabasco or any cheap hot sauce.
